As the title said I just won some free pork belly from the butcher. Anyone got a decent recipe and smoking process they can recommend?
I use the marinade from this recipe.

Cut into 1 inch strips, Marinate overnight, rub with any good pork rub (I love https://amazingribs.com/tested-recipes/spice-rubs-and-pastes/meatheads-memphis-dust-rub-recipe/#recipe), smoke at 225 until you hit 190 internal temp.
Optionally baste with honey every hour for a sticky bark.
