Hasselback eggplant parmesan - eviltoast

      • Hasselback slice one baby eggplant
      • Salt slices and allow moisture to drain
      • Coat slices, top, and ends with EVOO
      • Air fry for 12 minutes at 350°F, adding more EVOO as needed
      • Insert thin sliced of mozzarella between each slice
      • Air fry an additional 2 minutes to melt the cheese
      • Serve covered with sauce
